Easy Air Fryer Veggie Traybake
This easy veggie traybake is perfect for when you’re short on time or feeling a bit lazy because it only uses one pan (less washing up is ALWAYS a plus) and you really don't have to do much but chop the veg and chuck it all in!

You can use whatever veg you have lingering around - I used potatoes for starchy carbs which I partially cooked first just to give them a bit of a head start, then onion, peppers, mushrooms and I chucked a few sad cherry tomatoes in too.
To really optimise the health benefits of this meal try to get a colourful variety of veggies to ensure a wide range of nutrients and to support gut health.
The key to making this delicious is the seasoning - I went for paprika, turmeric, cumin, garlic salt and black pepper but you can use any of your favourite herbs/spices.
Serve it all on a bed of hummus to feel really fancy!
