One Pot Spicy Quinoa Recipe
Quinoa is an absolute staple in my diet. It's cheap, easy to prepare and boasts a fantastic nutrient profile:
It's rich in protein, fibre, and a source of iron, magnesium, phosphorus, and zinc. It's also gluten free so a great grain option for coeliacs or those with gluten sensitivities.
It's also super versatile - you can add it to salads, use it as a side for salmon or curries, as a base for veggie burgers, add it to your porridge and you can even use quinoa flour in baking.
It's also sustainable: As a hardy crop that thrives in diverse climates and soil conditions, it requires minimal water and resources compared to traditional grains like wheat or rice. Its cultivation supports biodiversity and provides economic opportunities for small-scale farmers in regions where it is grown, contributing to sustainable agricultural practices and food security.
If you've never tired it before I highly recommend giving it a go - you can buy pouches that can be microwaved if you want to try before committing to a whole bag of dry quinoa.
Oh, and by the way - it's pronounced keen-waa!

My favourite way to eat quinoa is in a really simple one pot meal. This recipe can be adapted so easily by changing the veg you add, the beans/pulses, the spice paste you use and the condiments/toppings you add - so it never gets boring!
It takes 25 mins in total and there's very little prep required - just a few veggies to chop - and only one pan to wash up.
Enjoy!
